چکیده

VELÍŠEK J., CEJPEK K. (2005): Biosynthesis of food constituents: Saccharides. 1. Monosaccharides, oligosaccharides, and related compounds – a review. Czech J. Food Sci., 23: 129–144. This review article presents a survey of selected principal biosynthetic pathways that lead to the most important monosaccharides, oligosaccharides, sugar alcohols, and cyclitols in foods and in food raw materials and informs nonspecialist readers about new scientific advances as reported in recently published papers. Subdivision of the topics is predominantly via biosynthesis. Monosaccharides are subdivided to sugar phosphates, sugar nucleotides, nucleotideglucose interconversion pathway sugars, nucleotide-mannose interconversion pathway sugars, and aminosugars. The part concerning oligosaccharides deals with saccharose, trehalose, raffinose, and lactose biosynthesis. The part devoted to sugar alcohols and cyclitols includes the biosynthetic pathways leading to glucitol, inositols, and pseudosaccharides. Extensively used are reaction schemes, sequences, and mechanisms with the enzymes involved and detailed explanations employing sound chemical principles and mechanisms.

Simultaneous Analysis of Saccharides between Fresh and Processed Radix Rehmanniae by HPLC and UHPLC-LTQ-Orbitrap-MS with Multivariate Statistical Analysis.

Radix Rehmanniae (RR) is a kind of herb which is widely used in the clinical and food processing industry. There are four forms of RR used in traditional Chinese medicine practice, which include fresh RR (FRR), raw RR (RRR), processed RR (PRR), and another processed RR (APRR), in which the APRR was processed by nine cycles of repeated steaming and drying. There are a large number of saccharides...

Structure of saccharides

Standard monosaccharides are widely distributed in nature and easily obtained by degredation of polysaccharides or isolation from various materials for example plants, microorganisms, yeast, marine sources or milk. However, the structures of many sugars which are known today are different from the general formula Cn(H2O)n. They are modified by amino groups or deoxygenation to name but a few. Ma...

Microbial Exopolysaccharides: A Review of Their Function and Application in Food Sciences

Extracellular polymeric substances are defined as high molecular weight compounds secreted by the microorganisms in the surrounding area. Since these extracellular substances are mainly polysaccharide, they are named exopolysaccharide. Microbial exopolysaccharides composed of sugar residue have growing interest as a new class of microbial products which can be used in food, pharmaceutical, and ...

Digestion , absorption , fermentation , and metabolism of functional sugar substitutes and their available energy *

Many kinds of oligosaccharides and sugar alcohols have been newly developed as bulking sugar substitutes that have beneficial health effects. A sugar substitute that is not digested and absorbed in the small intestine reaches the large intestine, where it is completely fermented by intestinal bacteria and produces short-chain fatty acids, which are converted to energy. The available energy of a...
